
Whitebait Rolls
This is a marvellous way to serve whitebait - tossed in seasoned flour, fried, rolled in soft white bread with a lick of mayonnaise. Delicious.
Makes 10 rolls
YOU WILL NEED:
250g whitebait
4 heaped TB flour
Pinch white pepper
¼ tsp salt
4 TB Mayonnaise
Lemon or lime zest
10 slices thin white sandwich bread, crusts removed
Rice bran oil for frying
Season the flour with salt and pepper and spread out on a large dinner plate. Drain the whitebait, pat dry with a paper towel then sprinkle them into the flour, tossing gently with fingertips so that each whitebait gets coated in the flour . Shake off excess flour before cooking.
Heat enough oil in a pan or saucepan for shallow frying. When hot, cook the whitebait, in batches, for 15-30 seconds. Drain on a paper towel.
‘Butter’ each bread slice with mayonnaise and add zest to each. Divide cooked whitebait evenly between all slices and roll tightly as you would an asparagus roll.
Serve with bubbles!
