Mike van de Elzen: Kale stampot with smoky sausage

Cooking time: 30 minutes

1 Rookwurst sausage or smoky sausage
1 Tbspn olive oil

¼ leek, cleaned and chopped
4 potatoes, peeled and chopped
2 carrots, peeled and chopped
6 large kale leaves
1 stock cube
2 cups water
salt and pepper

1 can pears in syrup

Heat oil in large casserole dish, cook sausage until just coloured. Add in all vegetables, stock cube and water.

Place the sausage on top and bring to the boil, then cover and simmer for 20 minutes or until potatoes are tender, remove lid and continue to simmer for 10 minutes just evaporate the stock.

Remove sausage and slice. Mash potato mix together and season.

Serve with the drained pears.
