Super-soft gluten free orange cake:
Cook time: 60 minutesÂ
Prep time: 180 minutesÂ
Serves: 8-10Â
3 small oranges Â
6 eggs Â
1 cup caster sugar Â
2 1/2 cups ground almond Â
1 tsp baking powder Â
Pinch of smoked flaky salt Â
Garnish:
1/2 cup whole almonds, roasted and crushed Â
2 tbsp icing sugarÂ
Start with the longest part of the cake by cooking the oranges. Â
Place the oranges into a large pot of water and cover with cold water. Bring to the boil and turn down to a simmer for 1 hour. Adding more water of required. Â
Preheat a oven to 160*c Â
Take a 22 cm cake tin and line the bottom with a round of greaseproof paper, then spray the rest of the tin with some cooking spray. Â
Chop the cooked oranges and place into a food processor, blend until smooth. Â
Beat the eggs with the sugar until frothy and add in the blended orange and pinch of smoked flaky salt, fold through the almond meal and baking powder. Â
Pour the batter into your tin and place into your oven. Bake for 60 minutes or until a skewer removes clean. Â
Turn the cake out and garnish with crushed almonds and dust with icing sugar. Enjoy!
