NICI WICKES: Food

Ricotta Fritters with Summer Fruit - a celebration of summer fruits and these dainty and absolutely scrumptious little fritters/dumplings. It’s a recipe I’ve developed to include in a masterclass I’m doing  in Whakatane end of February as part of the wonderful Sunshine & a Plate festival that is in support of the Hospice. More information: www.sunshineandplate.nz  The recipe is on our website but for more inspiration visit  http://www.niciwickes.com/  or her Facebook pagehttps://www.facebook.com/#!/niciwickes

LYNDA HALLINAN: Gardening

The importance of earnestly picking your veges! After a month off at the beach, I returned home to my garden this week, took a deep breath and went on a tiki tour. It could have been worse, I suppose: the birds got all the early plums and rabbits have kept the beans trimmed, but elsewhere I was greeted with gargantuan gherkins (one per jar?), good onions and the obligatory marrows.

You can't leave a summer vege garden unpicked for more than 2-3 days at the moment, or your crops will stop producing and start concentrating on seed maturation. Ie, coriander, if it gets too hot and dry, will simply bolt to flower and seed to keep their genetic material alive.

A few tips:

  1. Ease back on watering watery things, such as courgettes, tomatoes, cucumbers and gherkins. Courgettes are best if not watered at all in summer. After a heavy rain, mulch them to keep their roots cool instead. The more water you give them, the bigger, mushier and less flavoursome they are. Cucumbers can get a little bitter with no water, but they are incredibly efficient at tapping into it themselves so watering just makes them swell up too quickly, and tomatoes near to ripe will split and crack if over watered.
  1. Pick beans every second day. If the pods are bumpy, you've left them unpicked too long and the pod will have started to sacrifice its moisture to the seeds inside.
  1. Pick all ripe strawberries, including the rotten ones. If you leave rotten strawberries on the plant, they'll inevitably spread their grey mould spores to ripening fruit.
  1. Pick fully mature cabbages, cauliflower and broccoli. These can't be left to sit in the soil once mature - they will loosen their florets and run to flower. What you can do to slow this process is take a sharp knife and slice halfway through the stem, about an inch below the head. This reduces the sap flow and holds them for a few extra days.
  1. Don't panic if your lawn is brown and dry. Grass is remarkably resilient. Just ignore it. Leave it unmown.

ANDREW DICKENS: Music

David Bowie - "No Plan EP" - Andrew's verdict: 4.5 out of 5!

It’s only 4 songs and they’re songs that you can find elsewhere but that’s not necessarily the point.  No Plan itself is a very spooky song about death and Bowie’s take on it, while When I Met You is a song for his wife Iman that defies normal romantic conventions.  It’s a fullstop on the process of passing that has been played out impeccably by a master of performance and keen observer of life.  Bravo.
