It may be some time before avocados drop down again to the dollar mark.

Around the country prices have been as high as four dollars for a single fruit, compared to around one dollar in previous years.

But research from the Avocado Council has the demand sky rocketing, with 90-thousand more New Zealanders adding them to their everyday menu.

CEO Jen Scoular said there are plans to add to the national crop.

"A lot of growers are saying 'I can actually add a bit more' but it does take a wee while for avocados to go from planting a tree to be able to get a crop off them."

Ms Scoular said avocado trees are also irregular bearer's, meaning some years are lower yielding than others.
