Whitebait season starts on the 15th!
So the question is what makes the perfect fritter!
You could ask 50 people and they will all tell you a different recipe! handing down through family generations of course.
Most people prefer the simple approach….whole eggs, whitebait and salt! while the purest will make fritters with only whitebait and egg whites.
I prefer to add a little chef's touch! please see recipe below.
When you have your beautiful stack of fritters! What to have with them?
Buttered white bread and squeeze of lemon of course!
I also find a glass of bubbles like Quartz Reef works a treat... for the younger ones so sparking apple juice will do the trick.

Whitebait fritters
Makes 4-5 fritters depending on size!
1 cup whitebait
3 eggs, separated
1 TB flour
½ tsp sea salt crushed salt
Pinch white pepper
Pinch cayenne pepper
- Whisk the egg whites with the sea salt until soft peeks form.
- Combine the whitebait with the egg yolks, flour, pepper and cayenne.
- Fold in the egg whites.
- Heat a small amount of canola oil in a fry pan and drop in spoons of white bait, gently cook until golden and then turn.
