Yoghurt marinated pork chops:
10 loin chops Â
250ml yoghurt Â
1 onion, peeled and diced Â
10 cloves garlic Â
10 curry leaves handful of coriander Â
1 tsp mustard seeds Â
1 tbsp cumin seeds Â
1 tbsp fennel seeds Â
1 tbsp ground turmeric Â
juice of 2 lemons Â
1 tsp chilli flakes Â
2 tbsp vegetable oil Â
1 tsp fine saltÂ
Blitz the onions, garlic, curry leaves and coriander until smooth. This is your onion mix.Â
Toast the mustard, cumin and fennel seeds. Place into a pestle and mortar and crush until it ground. This is your spice mix. Â
Mix the yoghurt with the spice mix, turmeric, lemon juice, salt, chilli flakes, oil and onion mix. Rub marinade over the pork chops and allow to marinate until required. Cook on BBQ.Â
