Sylvia’s Sunset Beach recipe for Whitebait Fritters
Makes 6 or 12 cocktail-size

1 egg white
1/2 tsp sea salt
200g whitebait
1 heaped tbsp gluten-free flour (or regular)
Butter or oil for cooking
Lemon wedges and mayo to serve

Whip egg white with salt to a stiff peak. Gently fold in remaining ingredients.
Heat oil or butter in a pan to a medium heat and drop tablespoonfuls of the mixture into the pan. Cook until golden then gently flip.
Serve with lemon and mayo.Â
