Easter bread ‘n butter pudding
Celebrate Easter with this hot cross bread ‘n butter pudding - it is an absolute winner and is a scrumptious brunch or dessert dish!
Serves 4-6
6 hot cross buns (can use crusty bread or croissants*)
50g soft butter
3 eggs
¼ cup caster sugar
300mls milk
150mls cream
2 tsps vanilla extract
6 tbsps marmalade (or another jam)
Store-bought custard to serve
Whipped cream to serve
- Heat oven to 180 C. Generously butter an oven proof dish – one that is big enough to hold 6 buns snugly.
- Tear buns in half and butter each side. Arrange these messily in the prepared dish.
- Whisk eggs and sugar together then add in milk, cream and vanilla and whisk until combined. Pour this mixture over the buns and leave for 30 minutes to allow them to absorb some of the liquid. Dot tablespoons of marmalade over buns.
- Bake for 30 minutes or until custard is set in the centre.
- Serve warm with custard and whipped cream.
Nici’s note:
Try serving this pudding with semi-soft vanilla ice cream that’s had a teaspoon of cinnamon stirred through it.
*If using regular crusty bread or croissants add some dried fruit, orange zest and 1 tsp each mixed spice and cinnamon to the mixture.
