Citrus Flan
A one bowl cake/tart/flan! So easy to make and zingy to eat and it takes advantage of the last of the lemons and first of the oranges.
Serves 8 -10

4 medium eggs
1/2 cup melted butter
¾ cup sugar
100g ground almonds
1 cup dessicated coconut
Zest of 2 lemons
½ cup lemon juice
½ cup orange juice
1 cup milk
1/2 cup plain flour

Preheat oven to 170 C fan bake and grease a 24cm flan tin well.

Place all ingredients in your kitchen whiz and blitz for 1 minute.

Pour into the flan tin and place flan tin on an oven tray (to catch any small leaks) and bake for 45-60 minutes taking care that it doesn't brown to much on top and if so cover loosely with tin foil.

When cool remove from the tin and serve with creme fraiche, yoghurt or whipped cream on the side.
