Desserts for One - Boozy caramelised pears
Pears, brown sugar and butter and a splash of brandy or rum and you’ve got a gorgeous dessert in under 15 minutes!
Serves one
1 pear, peeled, cored and quartered
1 tbsps butter
2 tbsps brown sugar
2 tbps brandy
Ice cream to serve
Crumbled shortbread to serve
- In a small pan gently melt the butter and brown sugar until it is bubbling and syrupy. Do this without stirring it. Add in fruit and cook until fruit is tender. Splash in brandy, stir and simmer for 30 seconds.
- Spoon into a warmed serving bowl and serve with ice cream and crumble shortbread on top for texture. Maybe serve with custard too!
Easy custard
½ cup milk + 1 tbsp (can use coconut, almond, rice or soy mylk too)
1 tbsp sugar
Few drops tsp vanilla extract
1 heaped tbsp custard powder
Heat milk, sugar and vanilla in a small saucepan. Mix custard powder with extra milk until it forms a lump free paste. Add this paste to warmed milk and bring to a simmer, stirring, until custard is thickened – about 5 minutes.
