Chocolate and blueberries are both packed with flavonoids, which have been proven to have a positive effect on brain function, particularly in the memory stakes. Here I’ve crammed them into a sweet treat that is scrumptiously rich!
Brownie
1 cup plain flour
¾ cup cocoa
130g (about ¾ cup) brown sugar
1 cup sugar
½ tsp sea salt
170g butter, melted
3 large eggs
Cheesecake topping
250g cream cheese, softened
2 tsp vanilla extract
1 egg
200g fresh blueberries (can use frozen, thawed)
1. Heat oven to 160 C. Grease and line a 20x20cm tin.
2. Mix all brownie ingredients together in a large bowl. Scrape brownie batter into prepared tin.
3. Whip cream cheese with vanilla until smooth then beat in egg and beat to combine. Stir through blueberries.
4. Spread cheesecake topping over brownie and run a butter knife through it to swirl and mix it up a little with the brownie mixture.
5. Bake for 60 minutes or until brownie is set.
6. Eat warm spoonfuls with icecream or leave to cool in tin and slice into small squares.
