Whip up these beef tacos in a minute on the BBQ and you’ve got yourself a feast!Â
Makes 10-12 tacosÂ
Â
Ingredients:Â
1 piece rump steak, sliced into thin stripsÂ
1 red capsicum, sliced thinlyÂ
1 onion, sliced thinlyÂ
2 cloves garlic, minced with some saltÂ
2 tsps. cumin seedsÂ
1 tsp chilli flakesÂ
½ tsp dried oreganoÂ
2 tbsps. olive oilÂ
Juice from a lemon or limeÂ
To serve:Â
10-12 tortillaÂ
½ cup guacamoleÂ
Shredded lettuceÂ
Crumbled fetaÂ
Salsa – I use La Morena available in supermarketsÂ
Â
Method: Â
1. Marinate the beef strips in all of the main ingredients for at least 15 minutes.
2. While the meat marinates, warm the tortilla on the BBQ or in a pan, keeping them warm wrapped in a tea towel. Set out a build your own platter with tortilla, lettuce, guacamole, feta and salsa.
3. Cook the beef and vegetable mix on a hot BBQ plate or in a pan (do it in batches so it doesn’t stew) until the beef is just cooked. Serve alongside the platter and diners can build their own taco!
