Kiwi cuisine: Fusion looks to be our local flavour

Think of France, Italy, Japan and you automatically know what their cuisine is and what they are known for.

But what about us in New Zealand? What's our cuisine and are we actually recognised for it internationally? Do we have a brand?

Apparently that brand is becoming clearer - and it's fusion.

Owner of Phil’s kitchen in Auckland and Beef and Lamb ambassador chef Phil Clark told Mike Hosking we have got a huge influence from overseas thanks to immigration.

Clark returned from London a few years ago and brought back with him a French-European style to his kitchen creations.

“We all bring our own inspiration, techniques and journey.”

“The best thing is that we are showcasing great New Zealand products,” Clark told Mike Hosking.
