400g lamb mince
¼ cup breadcrumbs
1 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
½ tsp cinnamon
½ tsp sea salt
¼ tsp black pepper

4 brioche burger buns
Butter
Sliced cucumber
Sliced tomatoes
Spinach

- In a food processor, grind mince slightly finer than it comes (or ask butcher to do it for you), being careful not to turn it into sausage meat. By grinding it like this, it enables the proteins to hold together well for a burger patty.
- In a bowl, mix mince with spices, seasoning and herbs.
- Divide into 4, roll each into a ball then flatten to form a patty.
- Heat oil and fry each patty until well browned and cooked through.
- Split buns. Grill cut sides of each bun, then butter the rounded tops and slightly grill these too.
- Assemble burgers with spinach, cucumbers and tomatoes, dressed with yoghurt mint sauce and EAT!Â

¼ cup plain, unsweetened yoghurt
Squeeze of lemon juice
Small handful mint, smacked & chopped
Salt to taste
