All about encouraging children to get into the kitchen, Mike Van de Elzen joins The Sunday Session to share his delicious chocolate cake recipe, perfect to make with the kids!
Molten chocolate cake
½ cup vegetable oil
250ml cream
50ml espresso
1 cup boiling water
1 tsp vanilla essence
2 eggs, beaten
2 cups sugar
1 tsp salt
2 tsp baking soda
2/3 cup cocoa
1¾ cups plain flour
Preheat oven to 180*C.
In a large mixing bowl, with a whisk, combine ingredients one at a time starting from the top and working your way down.
Mix well until all combined (will be quite runny)
Pour into a greased and lined 20 cm cake tin
Place into the oven for 50 minutes, checking with a skewer to ensure cooked through.
Check regularly, and skewer test to check when ready.
Allow to cool before turning out.
Enjoy with some vanilla or hokey pokey ice-cream.
