This is a recipe from the new What the Fat cookbook and it is delicious! It serves four and takes no time at all to cook.
500g chicken, breast or thigh meat, diced
100g streaky bacon, diced
250g mushrooms, sliced thinly
3 cloves garlic, crushed
1 cup cream
Salt and freshly ground black pepper
½ cauliflower
½ tsp salt + pepper
Heat a drizzle of oil in a large pan over a high heat. Add the chicken nad bacon and cook, stirring often, for 2-3 minutes. Season well with salt and freshly ground black pepper. Add the mushrooms and garlic and cook, stirring, for another 3 minutes.
Add the cream, bring to a simmer and reduce the heat to low. Cook for 4-6 minutes, stirring occasionally until chicken is cooked and the sauce has thickened. If the chicken needs more cooking and the sauce is already thick, thin with some water and continue cooking as necessary.
While the chicken cooks, make your side dish of cauliflower rice: Steam cauliflower until just cooked then chop finely or use a food processor until it resembles rice. Season with salt and pepper.
Serve chicken with cauli rice.
