High profile chef Al Brown is planning to turn airline food "completely upside down".
The restaurateur has signed up to a three year partnership with China Southern Airlines to re-design its meals.
Mr Brown says the menus would feature a "four seasons, five senses" mantra, which could include a video component with meals.
He's hoping to showcase New Zealand lamb, salmon, green shelled mussels and even freshly shucked oysters.
Mr Brown says the flavour of the food dulls at 35000 feet which would need to be taken into account.
