Dark kitchens on the rise and traditional restaurants struggle with Uber Eat demand

As apps like Uber Eats cause the online food delivery market to boom, restaurants are turning to the concept of dark kitchens.

In the UK and Australia, there's an increasing trend of businesses setting up kitchen offshoots ... designed solely to fill online orders.

Hospitality expert Wendy Hargreaves says traditional restaurants are struggling to keep up with the online demand, and at the same time maintain food quality for their in-house customers.

"Then if you've got bike riders with lycra on their buts, wandering through a restaurant constantly its not so great for the experience of a restaurant either."

Wendy Hargreaves says restaurants are setting up virtual kitchens out the back, or at entirely separate locations.
