Try these tasty little bites at your next party!
Makes 18
1 cup flaked smoked fish (I use kahawai , trevally or mullet)
1 cup crème fraiche
2 tbsps white wine
2 tbsps finely diced chives
Zest from lemon
¼ tsp sea salt
Pinch white pepper
2 sheets puff pastry, each cut into 9 smaller squares
Milk to brush pastry
Extra zest or chives to garnish
- Preheat oven to 200 C. Line 2 trays with baking paper.
- Mix all ingredients, except pastry and milk, together until combined.
- Spoon heaped teaspoons of fish mixture onto each square. Bring the four corners together to encase filling, pinching them together. Transfer to trays. Brush pastry with milk.
- Bake for 15 minutes until puffed up, golden brown and cooked through.
- Cool for 5-10 minutes before serving, because no amount of bubbles will cool a scalded mouth!
