I'm convinced the vintage Gouda makes all the difference. Here's the recipe:
3 cups plain flour
6tsp baking powder
1tsp salt
75g butter
3/4 cup grated/...crumbled cheese
1-1 1/2 cups milk
Preheat oven to 220 C.
Mix dry ingredients in a big bowl. Add butter, rub it in or grate it in, add the cheese. Add 1 cup milk and stir w a knife until a soft and mildly sticky dough forms, add more milk to get to this consistency if a cup isn't enough.
Turn out onto a floured surface, pat into a rectangle, 3cm thick, cut into squares, place on a tray quite close together . Brush milk on top, add a slice of cheese on top too if you like.
Bake at 220 c for 10-15 minutes until golden.
