CHEAP FAST EATS VOLUME ONE

How often do we get home and we have no time to cook anything more than scrambled eggs! not that theres anything wrong with a good egg!

Its all about increasing the family recipe cookbook.

Lets share some ideas for tasty, nourishing meals cooked form scratch in under 8 minutes.

First a couple of basics for the pantry

. green (hot) red (med) yellow (mild) curry paste, cheap as chips and packed full of flavor

. pasta, penne works really well and is great for holding all those tasty ingredients

. canned lentils, instant meal in a can. just add flavour

. rice, long grain is always a winner

. whole peeled tomatoes, not flavored

. thai fish sauce and Dijon mustard, fantastic flavour enhancers

. stock cubes, its really hard to find any without flavour enhancers (msg) have a look on the back.

. some really tasty sausages (chorizo, pork, smoked)

Start up the fry pan

Thai curry, my number one go to:

250 gm chicken thighs, sliced thin
1 small onion chopped
2 tb curry paste

1 can coconut cream
1 tb brown sugar
2 tb thai fish sauce

sauté the onion and add chicken, followed by the curry paste.

add the coconut cream and cook out till chicken is tender, add sugar and thai fish sauce to finish

Puttanesca pasta (prostitute sauce)

2 cups penne pasta, cook as per packet instruction
2 tasty sausages
1 red onion
1 can whole peeled tomatoes
2 tb capers

peel the slim off the sausage (that has all the flavor) and smash up, sautéed with the red onion. Add the cooked pasta and whole peeled tomatoes and capers.
